Black Bean and Tomato Lunch

It’s simple math, really. A low bank account, a healthy diet, and a sale on black beans results in a quick lunch with a lot of fiber. I also ended up with a pretty full belly with just one can of black beans (315 calories). Threw in some spices, a tomato, and a splash of shredded cheese and you’ve got yourself a lunch. It also inspired another dish with avocado, but I’ll save that for another day.

Black Bean and Tomato

Need:
1 16-oz can of low sodium black beans
1 Roma tomato
A sprinkle of shredded cheddar cheese
2 teaspoons of chili powder
2 teaspoons of garlic powder
2 teaspoons of cumin
2 teaspoons of cayenne
2 tablespoons of extra virgin olive oil
1/4 cup water

In a saucepan on medium heat, warm extra virgin olive oil. Drain and rinse black beans, add to pan. Cook for 5 five minutes, add water and spices. Cook down until water has been soaked up by the beans and beans are thoroughly heated.

Take off the heat. Top with shredded cheese and a diced Roma tomato.

I refrigerated it at this point so I could take it to work, but you can eat it heated right after cooking. Enjoy.

Easy Mushroom Rice

Okay, I might have gotten lazy on this one. Went to the gym with my roomie and said I wanted rice for dinner. I’ve been on this no meat kick, and somehow started eating mushrooms. Also, I’m finding it’s easier to make food when I don’t have to wait for chicken to cook all the way through or the meat to stop mooing. So I decided to make dinner… easy rice from a bag. But apparently that wasn’t good enough. Seemed like I had to at least pretend I was going to cook…

This is the final product. A delicious mass of ricey goodness.

So I started with dicing up the last of the onion in the fridge, about a quarter of an onion, maybe a little less. Tossed that in a pan with olive oil to caramelize the onions. Right at the end, I added about a quarter cup of chopped mushrooms to the pan to cook them through. In another pan, I made this:

Cooked the rice through, then tossed in the onions and mushrooms. Delicious!
