So we’re back on The Whole 30 bandwagon, which means that we’re no longer eating any sugar, legumes, grains, alcohol, or dairy. It’s a bachelor’s dream: meat and potatoes, all day, every day.
Which is how Andy and I came to decide on steak tips. Me not wanting another pepper-crusted beef, I went for something new: a citrus and garlic steak tip marinade. Surprisingly, he really liked it. I think I’m going to have to start making some more marinades. I’m taking any suggestions, just as long as they are Whole 30 approved. Thanks!
Citrus Garlic Steak Tips
Gather
1 pound of steak tips
1/4 cup of orange juice
The juice from one lemon
1/4 teaspoon of thyme
1/2 teaspoon of ground pepper
1/4 teaspoon of salt
3 cloves of garlic, minced
2 tablespoons of olive oil
Whisk all ingredients except steak in a large bowl. Add steak and let marinate for at least an hour. Overnight is best.
Either grill outside, or on the stove top, heat a pan on high. Remove steak from bowl (discarding the excess marinade), and heat in pan until desired doneness.
Before serving, let sit for five minutes.
